Crockpot Chicken Soup

A loved meal in our home was and still is homemade chicken soup with homemade kluski noodles or dumpling. As a child making the dumplings was always my favorite part to help with, and I’ve taught my oldest how to make dumplings as well!

Over the course of the last several years I have changed my recipes several times, for a long time I didn’t even put chicken in our chicken soup, and I made my broth with chicken base that you just mix with water. My dad always makes a bone broth. Really, you can do whatever works best for you.

I have found a delicious and simple recipe for busy moms (and dads). Now this recipe is kind of a combination of many recipes that I have found that works best for my family. My kids love carrots and it’s their favorite part of chicken soup, so I add a ton of carrots.  You can of course change it up a bit to suit you as well!

 

Crockpot Chicken Soup

Ingredients

  • 4 stalks of celery
  • 6 carrots
  • 1/2 an onion
  • 2 chicken breasts (fresh or frozen)
  • 2-32oz chicken broths
  • 2 tbs of parsley
  • 1 bay leaf
  • 1 tbs of chicken stock or bouillon cube (optional)

Directions


Dice all of your veggies, and add to your crockpot. Then add the rest of your ingredients. Cook on high for 3.5 hours or on low for 7. Remove the chicken and shred. Return back to your crockpot and serve!
